Mexico's coffee plants tend to flower 3 to 4 times per year due to its geographic location and diverse climate. The months of November to March generally see a successful coffee harvest.

Most of Mexico's coffee is grown on small, private farms and then dried and hand-picked, making Mexico one of the largest exporters of organic coffee. With the decaffeination of water coffees, Mexico has also become an important player in the preparation of decaffeinated coffee.

The warm tropical climate of the Chiapas region provides good growing conditions and produces a consistent quantity. The volcanoes in this region have provided fertile soil that provides nutrients to coffee plants, helping them to flower. The Chiapas region grows Mexico's finest quality coffee beans; it is located near the Mexico-Guatemala border and its coffee is known for its delicate, light flavor and rich, lively acidity with a medium to light body.
