The roaster
Let me introduce myself Laurent Baysse (pronounced Baïsse 😊). I am a native of Aurillac in Cantal, it is the Auvergne region, yes an Auvergnat in the land of Ch'tis!!
After studying at the Faculty of Economic Sciences of Clermont-Ferrand, I took over the Brûlerie de Bernay in Normandy from Mr & Me Daigneau from 1996 to the end of 1998, then in 1999 I arrived in Lens to take over the company Lens Café (formerly the Cafés Machez created in 1959 by Mr & Me Machez, the successors Mr & Me Humez sold their business to Mr & Me Lavogez from whom we bought the business in 1999). I became sole manager in 2013, in 2015 I created the SARL Brûlerie du Cantin and turned to specialty coffees.
Expertise
I am training in new sales and merchandising techniques, going back to school and training in new approaches to roasting in Bordeaux; This was followed by my participation in the “One of the best workers in France” competition in roasting class in 2018 in Bordeaux and a third place in the French Roasting Championships in Paris in May 2019.
In July 2019, I participated in the QGrader certification where I validated 15 modules out of 19. I also graduated from the Leonidas Académie in September 2019.
In 2021 I became French Roasting Champion of Collectif Café and SCA France in Paris, followed in 2022 by a 5th place at the World Championships at the World Of Coffee in Milan.
At the beginning of 2023 I am a finalist in the One of the Best Workers in France competition and after my passage to the Sorbonne in June 2023 I am a winner and graduate of "One of the Best Workers in France" in the roaster class during the 27th edition, Albert Lebrun promotion for the 100th anniversary of this prestigious competition.
Mission
On March 9, 2020, the new latest generation French Roaster, the Phoenix, arrives, made in France and what's more in Hauts de France!!
Every day at work, I try to put excellence at the center of my objectives, so that each cup of coffee is an unforgettable journey and a moment of pure pleasure and sharing.
France is a mecca for gastronomy and respect for traditions. As an artisanal roaster, I must sublimate these specialty coffees that our farmers in the equatorial belt have cultivated for us with love and passion.
Let us put forward and at the center of our work, the farmer, who in his plantations, works daily so that we can have an exceptional product.
