This coffee is grown in the South of Mexico, on the Motozintla terroir in the Chiapas region, between 1200 and 1320 meters above sea level, in the shadow of the Ingas.
This blend of varieties (catimor, sarchimor, red caturra, etc.) is the fruit of the work of Jorge Arreola Nava. After harvesting and drying between patio and mechanical dryer, this coffee is decaffeinated with water, according to the "Mountain Water" process, by Descamex.
This decaffeination process was developed by the company Descamex. To our knowledge, it is the only Mexican company to decaffeinate coffee with water. The coffee is first exposed to steam, immersed then filtered to remove caffeine, then dried for 4 hours, before being cleaned.
