A blend requires very special mastery from the roaster. The selection of coffees, respect for the balance and qualities of each, the choice of cooking the beans are all criteria which make this blend in caracoli from Brazil, Brazil Cerrado and Colombia Cauca unique. Caracoli is a very rare coffee since it is a coffee bean that has grown alone in its cherry. In fact, usually there are two beans in each coffee cherry, so you will notice that these beans are rounder. Long considered defects during production, they are now very appreciated by coffee lovers.
When tasting we find a very delicious nose.
On the palate, it is a generous coffee with notes of apple, toast and dried fruits.
We finish on a nice length with a light liveliness.
Roasting
The roasting is slow and controlled. Each coffee is roasted independently of each other and only then is the blending carried out. A balance is provided by the work of the roaster between the different origins to respect each coffee and let the aromas of each terroir and process express themselves.
