In the El Palomar area, all conditions are met to produce excellent quality coffee. First of all, it is the altitude, between 1,400 and 1,900 m, which gives the grains a particularly pleasant flavor. The Arabica varieties used, such as Typica, Bourbon, Caturra and Pache, contain very good aromatic characteristics; moreover they are more resistant to diseases.
The plantations grow in the shade of large trees, the Pacay thus avoiding the burn of the sun's rays during the flowering of the coffee trees. Too much sun exposure frequently causes flowers to fall, preventing fruit from forming, a dramatic consequence for the farmer who loses a large part of his harvest. It is therefore necessary to manage to provide adequate shade, without too much darkness because the fruit also needs sun and heat to reach maturity.
