A coffee produced in the Sidama region and exported by the family business ASK. ASK is managed by Nadja Sofian, a determined woman passionate about coffee, who enthusiastically takes over her family's work to offer beautiful batches of Ethiopian coffee for export.
The Nibret Alimu washing station is located in the Sidama region. It takes the name of its current owner. Here several hundred producers come to drop off their red cherries, which are then washed and dried within this infrastructure which has 18 washing basins and more than 100 drying beds.
Chiré Terroir
The station is at an altitude of 1850 m, in the woreda (district) of Chiré, located within the village of Kuburta. The territories of the Sidama appellation are more than 500 km wide: the coffees therefore have very different profiles ! Sidama is the name of the appellation but above all it is the name of the people of southern Ethiopia. Sidamo is a negative way that people from the North use to talk about the Sidama people from the South.
History of coffee
The population is very attached to coffee and agriculture is the main profession of the inhabitants. They cultivate on small plots, in mixed cultivation with other trees and plants which allow them to meet their food and financial needs. This area has a very rich coffee culture, made up of ancestral know-how. The preparation of coffee (drink) follows a very specific ceremony. A large earthenware coffee pot, called a jebena, is used to prepare coffee. Boiling water is poured over it, then the coffee is allowed to steep before serving. This ceremonial is very important in Ethiopian culture and many people spend time chatting over a cup of coffee.
