    Originating in the Planadas and Gaitania terroirs, in the south of the Tolima region, this coffee is grown in a high-altitude area that is often covered by clouds. It is from this particularity that its name derives, since ‘Fábrica’ comes from ‘Cloud Factory’. We fell in love with this coffee, which is produced organically at high altitude (1600 - 2000 m). The coffee is produced from old varieties such as bourbon, typica, caturra, castillo and colombia, which are very rare today. The main harvest takes place from May to June (70%) and the mitaca from October to January (30%).


    THE CAFE FABRICA PROJECT Local climatic conditions are very difficult, with a relative humidity of almost 95% all year round, one of the highest in the country. As you can imagine, mastering the drying of green coffee is all the more strategic in this region

      This coffee is produced in two cooperatives of indigenous coffee growers by more than 240 families in the community of NASA WE'SX in the Planadas and Gaitania areas. Each family owns between 2 and 4 hectares. These areas are protected land for these native peoples, with over 6,000 trees per hectare. They are the guardians of one of Colombia's largest nature reserves. This land and their beliefs in caring for Mother Earth make them the best allies for producing one of the most delicious coffees in Colombia using organic farming practices. They have joined forces with a number of coffee producer organisations to promote the cultivation of their coffee, provide income for their families and strengthen their community.
