The secrets of the best roaster 2021 and his return on coffee:
“It is not easy to participate in a French championship, it takes courage and I again congratulate my colleagues who competed during this Paris Coffee Show. To both novices and experienced people, I would simply say not to be afraid to learn, to train, to question yourself, to share, to surpass yourself, to be passionate.
Work is a source of personal fulfillment as long as you like to share it with those around you, with an excellent cup of coffee of course. » - Laurent Baysse
This café is dedicated to all coffee enthusiasts who wish to discover a specific blend of Champion and which reveals the aromas of three exceptional terroirs. An accessible coffee with beautiful aromatic complexity specially designed for serious coffee lovers to savor and share.

Roaster Laurent Baysse
Let me introduce myself Laurent Baysse (pronounced Baïsse 😊 ). I am a native of Aurillac in Cantal, it is the Auvergne region, yes an Auvergnat in the land of Ch'tis!!
After studying at the Faculty of Economic Sciences of Clermont-Ferrand, I took over the Brûlerie de Bernay in Normandy from Mr & Me Daigneau from 1996 to the end of 1998, then in 1999 I arrived in Lens to take over the company Lens Café (formerly the Cafés Machez created in 1959 by Mr & Me Machez, the successors Mr & Me Humez sold their business to Mr & Me Lavogez from whom we bought the business in 1999). I became sole manager in 2013, in 2016 I created the SARL Brûlerie du Cantin and turned to specialty coffees.
