An adventure around East Africa takes many to Ethiopia, a country notable for being the source of the world's coffee supply; The Arabica coffee plant originated here thousands of years ago. Even the term "coffee" comes from the Kaffa region in the southwest of the country, where the plant originally flourished. In modern times, Ethiopia continues to grow some of the most sought-after high-quality specialty coffees in the world.

The vibrant colors of the earth cover the landscape, and numerous high-altitude mountain ranges complement the country's tropical cloud forests. Ethiopia is unique in that because coffee is native to the country, the consumption of coffee beans was an important part of daily life and local culture long before it became a commercial industry. Almost all of the country's coffee is grown on small farms. The harvest season extends from November to February.

“La Brûlerie du Cantin selects for you a country, a region, a plantation and above all farmers who wish to improve the quality of their coffee, which allows them to be freer in their actions. »

Despite the recent economic, environmental and social problems that have affected the country, local farmers remain dedicated to coffee cultivation, which provides the livelihood of many Ethiopian citizens.

Production is simple and essentially organic; the beans are grown in the shade, interspersed with different crops, and no chemicals are used. In Ethiopia, coffee is processed in two ways – either dry or wet – but most varieties are wet processed. This also affects the resulting flavor profile.

The flavors have undertones of citrus and spices like cinnamon or cardamom with a tropical or toasty aroma.

With its place in local history, coffee is firmly rooted in Ethiopia's local way of life. It has played a role in indigenous cultural practices for several generations, the most important being the local "coffee ceremony".

A coffee ceremony serves as an opening for important events. It also provides an opportunity to discuss important issues, as it promotes a social atmosphere. Locals meet and chat regularly over coffee, much like Westerners often have coffee.
