Some of the world's most popular coffees come from South America, and perhaps no country in the region does it better than Brazil. Since the 1840s, Brazil has been the main player in the international coffee trade. Today, the country is also known as the world's leading exporter of instant coffee.
The coffee grown in Brazil is mainly Arabica, which accounts for around 80% of the total harvest. The harvest season runs from May to August. Brazil produces around 25% of the world's coffee supply. Brazil also produces some truly exceptional micro-lot coffees, proof that speciality coffee need not be limited to small producing countries.
"La Brûlerie du Cantin selects for you a country, a terroir, a plantation and above all, farmers who want to improve the quality of their coffee, which allows them to be independent in their actions."
Brazil's geography makes it an ideal country for growing coffee. Almost the entire country is in the tropical zone. Its relatively stable climate, mainly hot and humid, as well as its rich soils, make conditions ideal for growing coffee. There are also several small regions in the country that benefit from "microclimate" zones conducive to the production of very high quality specialty coffee.

Historically, much of the coffee grown in Brazil was processed using the natural method due to water scarcity in early coffee-producing regions. This situation is changing and natural and fully washed methods are also being used, especially in the specialty sector. These processes are used to highlight different characteristics of the coffee and bring out different traits.
A particularity of Brazil
These coffees are reduced to pulp but left to dry with the fruity mucilage still attached to the beans, skipping the usual fermentation stage. The result is a crisp acidity like that of a washed coffee, but also a heavy body and sweetness like that of a natural coffee.
