In the El Palomar area, all the conditions are right for producing excellent quality coffee. First and foremost, the altitude, between 1,400 and 1,900 m, gives the beans a particularly pleasant flavour. The Arabica varieties used, such as Typica, Bourbon, Caturra and Pache, have excellent aromatic characteristics and are more resistant to disease.
The plantations grow in the shade of tall trees, as the Pacay avoids being burnt by the sun's rays when the coffee trees are flowering. Too much exposure to the sun often causes the flowers to fall off, preventing the fruit from forming, with dramatic consequences for the farmer, who loses a large part of his harvest. So it's important to provide adequate shade, without too much darkness, because the fruit also needs sun and warmth to ripen.
