    Originally from the Planadas and Gaitania terroirs, to the south of the Tolima region, this coffee is grown in a high altitude area very often covered by clouds. It is from this particularity that its name takes its origin, since “Fábrica” comes from “Cloud factory”. We really fell in love with this coffee, which is part of high altitude organic production (1600 - 2000 m). Coffee is produced from ancient varieties such as bourbon, typica, caturra, castillo and colombia, which is very rare today. The main harvest takes place from May to June (70%) and the mitaca is from October to January (30%).


    THE CAFE FABRICA PROJECT Locally, climatic conditions are very difficult due to relative humidity of nearly 95% all year round, one of the highest rates in the country. As you will have understood, controlling the drying of green coffee is all the more strategic in this area.

      This coffee is produced in two indigenous coffee grower cooperatives by more than 240 families from the NASA WE'SX community on the Planadas and Gaitania terroirs. They each own between approximately 2 and 4 hectares. These terroirs are protected lands for these native peoples, there are more than 6,000 trees per hectare. They are the guardians of one of the largest nature reserves in Colombia. This land and their beliefs, caring for Mother Earth, make them the best allies to produce one of the most delicious coffees in Colombia with organic farming practices. They have joined forces with several coffee producer organizations to promote their coffee culture, provide income for their families and strengthen their community.
